Josephine is a nutritionist and Lecturer in Nutrition and Dietetics at the Solomon Islands National University (SINU). She has worked with community, private and government stakeholders on projects aimed at improving nutrition and health in the Solomon Islands and co-authored multiple publications on the topic. Josephine received a Solomon Islands Government Scholarship to complete her Diploma of Dietetics and Public Health Nutrition at the Fiji School of Medicine and was awarded a World Health Organization (WHO) scholarship to undertake her Bachelor of Science (Nutrition) at the University of Wollongong.

She is currently a member of the Federation of Oceanic Nutrition Societies and through this and her position at SINU, aims to establish professional connections that will help her launch a project engaging nutrition graduates and young people, both in and out of schools. The project's goals will be to promote good nutrition in communities and address the increasing rates of malnutrition and non-communicable diseases in the Solomon Islands.
